Chicken in Lemon & Rosemary Glazed Honey


This is the one I always want to make at home,
making freshly baked chicken right from home.
And most importantly, it's fresh right from the oven.

A friend from G Moms known as "Gorgeous Moms",
gladly shared her special techniques in baking a wondrous chicken, 
that you need to quickly take a photo on your dish before you get an empty plate :)

"Chicken in Lemon & Rosemary with Honey Glaze"

Ingredients:

1  whole  Chicken (medium size)
1/2           Lemon   (thinly sliced)
                Rosemary Leaves
                Parsley
                Salt
                Pepper
                Olive Oil
                Honey
                Water
                Cornstarch


Procedure:

1.  In one medium size chicken, rub the chicken with salt and pepper inside and out.

2.  Then rub with Olive Oil.

3.  For stuffing, place 1/2 size lemon inside the chicken, fresh Rosemarie's and fresh Parsleys. But if one whole lemon fits then place 1 whole lemon instead.  Then mix them.

4.  Preheat oven at 450 F degrees for 15 minutes, then place the chicken in the oven bake at of 40 minutes to 1 hour.

5.  After 30 minutes of baking , brushed the top with honey to get the golden color .

6.  As for the drippings , make a gravy by adding some water and cornstarch to thicken the sauce.

"Homemade Ice Cream"
without an Ice Cream Maker

Ingredients:

For base...
2  packs       Nestle All Purpose Cream
1  can (big)   Condensed milk
1  cup           Fresh Milk
                     some sugar   (to preferred sweetness)


For flavors:

- for fruits
...3 pcs  of fruit  (same kind) like avocados or mangoes

- for powdered flavor
...2 heaping tablespoon of powdered flavors  (dilute in hot water)


Procedure for base:

1.  Blend together all purpose cream and condensed milk together.

2.  Then add sugar only to taste if needed.

3.  Blend well together with a hand held blender until texture turns smooth.

4.  Then add milk little by little, just to dilute a little, mix well.

5.  Place it in a container, mix, and freeze for 3 hours, then take it out to mix and fold to bring the bottom to the top and the top to the bottom.

6.   Then freeze again and take out again and repeat process one more time.  This is to smoothen the   texture of the cream... freeze overnight.


For adding flavors before freezing...

-  3 cups fresh fruits of same kind or 2 heaping tablespoon of instant flavors dilute in small hot water.

...add your flavor
blend half of it and the other half just scrape to give course texture.


Note:  
- consme Homemade Ice Cream within 1 week.
- no preservatives.

Homemade Belgian Waffles Or Pancakes



We have been going to malls most of the time and always stops by 
at Belgian Waffles...

and my daughter always orders cheese waffle every time we go,
I don't argue because their Belgian Waffles are really good anyway.
But some store waffles makes thick waffles and other branches makes thin waffles.

So I told my daughter I will try to make these Belgian Waffles at home so we make 
more than one waffles.

And made one at home, my daughter loved it ,
...and said "mmm, it taste like pancakes!"
now I can add these for here school snacks.

So easy!!! 
...and made healthy!!! :)

"Homemade  Belgian Waffles"
Or
"Homemade Pancakes"

Ingredients:

   2     cups        Flour
1/2     cup         Brown Sugar
1/4     cup         White Sugar
2 1/2  tsp.         Baking Powder
   2     large       Eggs  (separated)
1 1/2  cups       Milk
     1   cup        Vegetable Oil
     1   tsp.         Vanilla Extract

Optional:
Top with your favorite choice of fillings
... like Blueberries, Strawberries, Cream cheese, cheese, Ham and more.

Procedure:

1.  Sift together dry mixture flour, sugar and baking powder.   Mix until combined well.

2.  In seperate bowl, beat egg yolk until becomes lightly yellow.  Then add milk, oil and vanilla extract.  Stir and mix well.

3.  Then combine the wet ingredient with the dry mixture together.

4.  In another separate bowl, beat the egg whites until it becomes foamy (Stiff peak).  Then Fold this with the mixture ingredients together....Fold carefully.

5.  Preheat waffle iron according to machine instructions.  In an automatic waffle iron should take about 3 minutes...until golden brown.  (I used my sandwich make since I don't have the exact shape shape for square waffles, they work just the same :)

6. Note:  If your don't have waffle iron, you can use regular pan to make your Pancakes at home.

7.  Enjoy.

Chicken Pops



This recipe taste like "Chicken Pops",
 my family enjoyed!!!

We usually buy chicken pops most of the time right after school.
Now we don't have to buy chicken pops outside,
we can now make it at home for snacking anytime.

This is a recipe to remember. 
#kids favorite
#great for school snacks

 "Chicken Pops"

Ingredients:

  8 oz chicken breast, cut into bite-size cubes
  1 cup  cornstarch
  2 cups oil for deep-frying

MARINADE:
  3 cloves  garlic,  minced
  1 tsp.    Salt
  1 tsp.      Brown sugar
  2 tbsp.    Water
  1/4 tsp.  Baking soda
  1 tbsp.   Dark soy sauce
                 ( I used coconut brand)
  1/2 tsp.  Chicken cube (knorr)
  1/4 tsp.  Spanish Paprika Ground

On pan:  glaze some brown sugar

Procedure:
1.  Mix all ingredients of Marinade in a big bowl,  stir well. Add chicken pieces and marinate for 30 minutes.

2.  Heat up the boil in the wok for deep frying.

3.  Coat the chicken with the cornstarch evenly.  Deep fry the chicken until golden brown,  remove from the oil and set aside.

4.  Add a little brown sugar when chicken almost nearly done.

5.  After frying and set aside. You may also add flavored powder like barbeque,  cheese or sour cream then shake well.

Other option:
You may add these optional ingredients too for plate dish :)
For marinade addition:
...1 tbsp scallions,  chopped finely
...1 tbsp ginger,  minced
...1 tbsp Rice wine
.1/4 tsp. Pepper

Garnish :  1 cup Fresh basil leaves

Agio Olio Clam Pasta



This recipe I found from a friend Eliza, I always wanted to make simple pastas for my
 family, most especially my daughter who loves to eat noodles and pastas.  
We always go to fine dine restaurants. 
I got attracted by the way my friend cooked this "Agio Olio Clam Pasta"
and she willingly shared.

"Agio Olio Clam Pasta"

Ingredients:

  1/2    kilo     Nylon Shell cooked(reserve 1 cup stock/broth)
15-20  pcs      garlic cloves peeled and minced
                       Olive Oil
                       Salt
                       MSG
450 g             Cooked Spaghetti 
                     Basil Leaves (McCormick)

Procedure:
1.  Heat olive oil then sauté garlic in a pan over small heat 
      ( don't to let your garlic turn brown). 
2.  Sprinkle basil as much as you want. 
3.  Then toss in the cooked clams and toss for 1 minute.  
4.  Add Salt and MSG to taste. 
5.  Then add the stock or broth of the clams. Bring to boil.  Add more salt as you desire. 
6.  Combine thoroughly with pasta before serving.

Note: 
You can also use leftover Clams from your Clams with Tausi or Clams with Oyster Sauce dish for extra flavor.
